Food Preparation and Cookery – City & Guilds NVQ                         Level 1 - Certificate                                 

 

    Course Content

 

This is the course will give students a good basic understanding of hospitality work, enough to succeed in a job or move on to further study at college.

What you will learn:

You will cover a wide range of topics that will equip you to gain a valuable understanding of how the hospitality industry operates.  Assessment methods include written assignments, practical assessments and underpinning knowledge questioning. You will gain a range of skills and experience vital for your progression onto further education in post 16 or in this area of employment.

 

 

    For the Certificate: -

 

A unit based format which enables you to experience a range of teaching and learning styles, from practical work, to group discussions, and interactive sessions using IT facilities. All units are assessed and graded with an overall grade for the qualification awarded.

This course will provide you with an introduction to practical skills and knowledge required for the Catering and Hospitality industry including subjects as follows:

 

Maintain a safe and hygienic working environment

Work effectively as part of a Hospitality team.

Maintain Food safety when preparing, storing and cooking food.

Prepare vegetables

Cook vegetables

Prepare and cook fish

Prepare and cook meat and poultry

Package food for delivery

Maintain customer care

Prepare and finish simple salad and fruit dishes

Prepare and clear areas for counter and takeaway service

Prepare hot and cold sandwiches

Prepare and cook pasta

Provide a counter and takeaway service

Prepare and cook rice

Prepare and cook eggs

Prepare and cook pulses

Prepare and cook vegetable protein

Cook and finish simple bread and dough products

    Progression

 

The qualifications provide knowledge and practical skills at level 1 in Food Preparation and Cookery

On completion of this qualification students may want to progress on to Level 2 Diploma in Food Preparation & Cooking. This course can be done through Manchester College at the Fielden Campus.
